Breakfast Quinoa

I had been reading in my Clean Eating Magazine and Oxygen magazine about quinoa for breakfast so I thought I would give it a try.  No real recipe followed, just kind of threw stuff together that I had on hand and what came about was delicious!  It was so filling and soooooo good.  Enjoy.
Breakfast Quinoa
1 cup quinoa, rinsed
2 cups I use unsweetened vanilla almond milk or you can use skim milk
1/2 cup dried fruit of your choice, I like apricots, mango, berries, chopped
3 Tbsp pure maple syrup or honey, or agave
1/2 tsp cinnamon
1/4 cup low fat cottage cheese or  low-fat ricotta
In a small saucepan, combined the quinoa and milk and bring to a boil. Cover and cook over low heat until the milk has been absorbed and the quinoa is tender, about 15 minutes. Lightly fluff the quinoa with a fork; add the dried fruit,  maple syrup,  and cinnamon and stir well until heated through.
Top each portion of quinoa with a tablespoon of cottage cheese or  ricotta and serve.

The great thing about this is you can whatever you want to your liking. Almonds, orange zest, raisins, the sky is the limit!:)

Wednesday,November 30: 30 minutes Bootcamp, "Old ladies" volleyball league game tonight....reliving collegiate volleyball career by pounding on the "less experienced"...don't judge me, it is who I am, and those who know me just deal with it:)
Thursday,December 1st: 30 minutes easy walking
Friday, December 2nd: 30 minutes bootcamp, 23.34 minutes, 3.0 miles on the treadmill

Monday, December 5th: 30 minute bootcamp, 3 miles on treadmill at 8.0 pace
Tuesday, December 6th: 30 minute bootcamp
Wednesday,December 7th: 30 minute bootcamp, 20 minutes jumping on the mini trampoline(FUN, felt like a kid again)
Thursday, December 8th: 1 hour of Yoga
Friday, December 9th: 30 minute Bootcamp

2 weeks down and feeling good, and love knowing that I am doing something great for my body and my health everyday!

Monday, December 12th: 30 minute Bootcamp, 30 minute Fat Loss Setting Elliptical
Tuesday, December 13th: 30 minute Bootcamp
Wednesday, December 14th: 30 minute Bootcamp, 30 minute My Mini Trampoline Workout

Treadmill Workout

I needed a quick 3 mile treadmill workout, that would get the heart pumping, the blood flowing and the sweat dripping and this did it.  Enjoy

Repeat again  
3 miles in under 30 minutes!

Pretty simple but I like interval running and this didn't bore me

These were amazing.....

Besides loving the beautiful fall leaves, the crisp football weather, the best thing about fall could be the addition of pumpkin to everything I make.  I love the smell of pumpkin, the way it tastes, the memories it evokes, and the texture it provides to so many recipes is fantastic.  We carved our pumpkins.....(the results from facebook voting, my sister with the goofy looking frankenstein face(#3) won...whatever...I personally was disturbed by my angry clown(#2)..).anyways, enough of that...we carved, we scraped and got a HUMONGOUS load of pumpkin seeds...HOLLA....so while my husband went for a garlicky, seasoned pumpkin seed, I went for a sweet and salty combo and I.AM.IN.LOVE...

Maple Cinnamon Pumpkin Seeds
  • 2 cups raw pumpkin seeds, freshly scooped
  • I think I used about 2 tbsp. pure maple syrup
  • cinnamon to coat
  • 1/2 tsp. sea salt
    Directions: Start by washing your pumpkin seeds. Make sure they are clean thoroughly and pat dry. Place the seeds in a mixing bowl and coat with the maple syrup, cinnamon, and salt, make sure everything is covered.   Spray a lined baking sheet with cooking spray and make a single layer of seeds on the baking sheet. Bake at 300 degrees for 40 minutes or until a golden color. Let cool completely before breaking apart and storing in an airtight container.

    Clean eating chicken Parmesan. Yummy. Look for recipe to come. after I devour it:) my fingers were frozen yesterday from sitting at the football game so that is why I didn't post. Used up one of my free days in the 30 posts 30 days challenge. Bummer but now I just have to b more focused. Incline pushups.bootcamp. I hurt.

    November is National Blog Posting Month or NaBloPoMo. It’s a month dedicated to the art of blogging, taking it to a new, challenging level by pushing all participants to have blog everyday of the month.  WEGO has prompted us health bloggers to accept the challenge of 30 posts in 30 days.  I am a little behind by a couple of days but I am starting now and that is all that matters!   This is definetly going to be a challenge for me.
