WIAW "Eat Your Veggies"


 

Hello all, sorry about my absence last week, life you know, just kind of got in the way! So here I am linking up with Jenn @ PeasandCrayons again for this week's What I Ate Wednesday.  Jenn took a "Veg Pledge" to eat an extra cup of vegetables every day, for two weeks.  I feel like I am kicking butt in the "veg pledge"  Here are my eats from last week...
egg omelet and ezekiel bread,wasa cracker with pb and butterscotch chips, quinoa summer salsa salad, grilled chicken breast and steamed veggies, iced mocha, coconut flour pancakes( I am trying to eliminate gluten for a week, will post on that later)another salad, caprese salad..luurvve, my Naturebox goodies(see that post here) that I have been snacking on all week...chicken salad with avocado, and a tilapia salad with sweet potatoes....

I didn't show all my salads, but pretty sure could and do eat a salad every day, the DOLE Spinach and Spring Mix is my favorite, add in some avocado, black beans, strawberries, cherry tomatoes...and lest not forget the turkey on the top!  Oh, snap.....hungry just thinking about it!
