Pressure Cooker Quinoa

I love quinoa, and I love my pressure cooker...I hate waiting for my quinoa to cook..... my pressure cooker cooks things...real fast....soooo....I decided to pressure cook my quinoa.  I used the book that came with it to kind of gauge how I wanted to proceed and came up with this:

 Bring 2 1/4 cups of veggie stock or water to a boil in the cooker.

Stir in 1 1/2 cups rinsed quinoa and a little sea salt

 Lock the lid in place and set your timer for 2 minutes (you don't have to wait for it to reach high pressure)

Turn off the heat after 2 minutes, whether or not your cooker has reached high pressure.

Allow the pressure to come down on its own for 10 minutes(I like crunchy quinoa so I only do 8 minutes) and release the lid. Makes 4 cups.

If your quinoa isn't done how you like it, replace the lid and allow it to steam in the leftover heat for another minute or two.

 Fluff with a fork. Perfection!

I froze bags full of 1 cup quinoa so I can just grab and go for lunch, breakfast, snack, etc...
