Snowstorm is a coming......

Of course it would....

It is our Christmas festivities weekend, and we are traveling.....

How rude....but have no fear, we have a 4 wheel drive truck and, oh yes, we will get there, one way or another:)

Workouts- Bootcamp


I continue on with my 30 minute yoga sessions at night, I can truly feel my balance getting better with each inversion/handstand!



Breakfast have been pretty routine....
Nog Energizer Smoothie
1/2 half frozen banana
2 cups spinach
1/2 cup blueberries
1/3 cup chobani greek plain yogurt
1/2 cup Nog So Delicious Coconut Milk
1/2 cup Almond Breeze Unsweetened Vanilla
Mix all together and enjoy
 Kale, Egg Scramble
1 egg
1 egg white
1 handful of Kale
1 pear sliced
Saute' Kale in pan with coconut oil
Add eggs and scramble to your liking

Supper last night.....I took my Crock Pot Pizza recipe and modified it for Mexican...



MexicanTurkey Bake

Ingredients
  • 1 lb Turkey Sausage
  • 1 Pepper (yellow, green, red, or mixture) chopped
  • 1 small onion chopped
  • 1 can black beans(optional)
  • 1 14 oz can of stewed tomatoes
  • 1 14 oz can of tomato sauce
  • 2 cups reduced fat Mexican Style Cheese( or whichever you prefer)
  • 4 Whole Wheat Tortillas
  • Seasoning:
  • Garlic Salt
  • Cumin
  • Season Salt
  • Paprika
Instructions
Preheat oven to 350
Spray 9x13 pan with non stick spray
1. Brown turkey sausage in a large skillet
2. Once browned add peppers and onions
3. Once vegetables are softened add black beans(optional)
4. After simmering for a couple minutes add stewed tomatoes and sauce and continue to simmer
Casserole assembly line:
1/2 of the Turkey/Tomato concoction
2 Whole Wheat Tortillas
1 cup cheese sprinkled on top
Remainder of Turkey
2 Whole Wheat Tortillas
Remainder of cheese
Bake for 25 minutes until casserole is bubbly and cheese is melted.
