And last night we had a yummy supper which was pretty much throw things this and that in a pan and call it good. I had read somewhere that SunButter makes an amazing sauce so and I luckily had some on hand so I threw that together with some other ingredients and it made quite the tasty dish.
- 6-8 chicken thighs
- 1 bag frozen carrots
- 1/2 bag frozen spinach
- 1 cup chopped green peppers
- 1/4 cup SunButter Sunflower Seed Butter
- 2 tablespoons of Bragg's Liquid Aminos
- 1 tablespoon of lime juice
Cook your chicken
When your chicken is almost done place all the frozen veggies in that pan with the chicken, cover, and let the steam cook your chicken and your veggies together
While that is steaming away put together your sauce
Add the SunButter, Lime Juice, and Liquid Aminos together and blend (Magic Bullet, processor, whatever you use)
*You can add more of each depending on your "sauce" likeness. I do not like a lot of sauce so these amounts were perfect.
When the vegetables are tender, chicken is cooked, add the sauce to the pan and let it melt and meld with the veggies and chicken for a few minutes.
Serve and Enjoy!

And tonight we are off to another baseball game (providing the weather holds out, it looks like rain)
Oh yes, and on to the potty training...Big E turned 2 in February and has been "curious" of the bathroom, we weren't going to force it, but encourage it. Well you all saw this picture....
on Instagram the other day....potty training farm style....well this morning he woke up and wanted to go potty so I took him to the bathroom and he went....it was awesome. He was so proud. Cross your fingers that this continues.
Knowing him he is just toying with me....
